A sophisticated sparkling wine dedicated to the beautiful nymph Daphne, priestess of Mother Earth.
Daphne is made from Chardonnay and Pinot Noir grapes vinified separately and then left to mature for years. The sparkling wine was obtained by cutting 3 reserve vintages of which 20% in barriques. It ages on the lees in bottle for 40 months, disgorged and dosed at 5 grams/liter. It rests 6 months before sale.
It has a fine and persistent perlage. Beautiful steady foam. Aroma is rich in fresh fruits, apple and red fruit, with a hint of hazelnut and spices. Rich, powerful, well-balanced in the mouth with a savoury and persistent finish. It is recommended to serve it at 8-10°C.
It is excellent served through the meal to accompany white meat, but it finds its perfect exaltation with fish-based cuisine.
